Sharon’s Brown Rice

Cook 1 cup brown rice in 2 cups water and 1 Tblsp. Olive oil for about an hour or until done. (this makes 3 cups rice)

Mix 1 egg, ¼ cup grated cheese, juice of 1 lemon, salt & pepper to taste.

Add this mixture to the rice and simmer 5 minutes.
Serve as is or add sautéed vegetables.

Some suggestions would be zucchini and egg
plant, or broccoli, celery and carrots. You can even add organic poultry.
This is quick and easy when you have the rice base prepared in advance.
